Mini Egg Rocky Road
A no-bake classic that’s perfect for Easter.
Ingredients:
200g milk chocolate
100g unsalted butter
2 tbsp golden syrup
100g digestive biscuits, crushed
50g mini marshmallows
100g Mini Eggs
Method:
Melt the chocolate, butter and syrup together in a saucepan. Stir in the crushed biscuits, marshmallows and half the Mini Eggs. Pour into a lined tin, scatter remaining Mini Eggs on top, and chill for 2 hours. Slice into squares and serve!
Mini Egg Cookies
Soft, chewy, and packed with colour — a perfect Easter baking activity for kids.
Ingredients:
125g unsalted butter (softened)
100g light brown sugar
75g caster sugar
1 large egg
1 tsp vanilla extract
225g self-raising flour
100g Mini Eggs (crushed slightly)
Method:
Cream the butter and sugars together. Add the egg and vanilla, then mix in the flour. Fold in crushed Mini Eggs. Roll into balls and place on a lined baking tray. Bake at 180°C for 10–12 minutes. Cool slightly before eating — if you can wait!
